Cabbage Lasagna Dish this …

Ingredients:

  • 1 large head of green cabbage
  • 1 pound ground beef or turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 large egg
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish (optional)

Preparing the Cabbage

  1. Start by preheating your oven to 375°F (190°C).
  2. Remove the core from the cabbage head using a sharp knife. Carefully cut around the core to release the leaves.
  3. Bring a large pot of salted water to a boil. Once boiling, add the cabbage leaves and blanch them for about 2-3 minutes until they are tender but still firm. This will make them easier to roll later.
  4. Using tongs, carefully remove the leaves from the pot and place them in a bowl of ice water to stop the cooking process. Let them cool for a few minutes, then drain and pat dry with paper towels.

Preparing the Meat Sauce

  1. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Next, add the ground beef or turkey to the skillet. Cook until browned, breaking it apart with a spatula as it cooks. This should take about 5-7 minutes.
  4. Once the meat is browned, drain any excess fat from the skillet. Then, stir in the crushed tomatoes, oregano, basil, salt, and pepper. Let the sauce simmer for about 10-15 minutes, allowing the flavors to meld together.

Preparing the Cheese Mixture

  1. In a mixing bowl, combine the ricotta cheese, egg, half of the grated Parmesan cheese, and a pinch of salt and pepper. Mix well until all ingredients are fully incorporated.
  2. Set aside the cheese mixture for later use.

Assembling the Cabbage Lasagna

  1. In a 9×13 inch baking dish, spread a thin layer of the meat sauce on the bottom to prevent sticking.
  2. Take a cabbage leaf and place about 2-3 tablespoons of the cheese mixture in the center. Roll the leaf tightly around the filling, tucking in the sides as you go to create a neat roll. Place the roll seam-side down in the baking dish.
  3. Repeat this process with the remaining cabbage leaves and cheese mixture until you have filled the dish. You should be able to fit about 8-10 rolls, depending on the size of your cabbage leaves.
  4. Once all the rolls are in the dish, pour the remaining meat sauce over the top, ensuring all the rolls are covered.
  5. Sprinkle the remaining mozzarella cheese and Parmesan cheese evenly over the top of the sauce.

Baking the Lasagna

  1. Cover the baking dish with aluminum foil, making sure it doesn’t touch the cheese.
  2. Bake in the preheated oven for 25 minutes. This will help the flavors meld and the cheese to melt.
  3. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
  4. Once done, remove the lasagna from the oven and let it sit for about 10 minutes before serving. This resting time will help the rolls hold their shape when you cut into them.

Serving the Cabbage Lasagna

  1. Using a sharp knife, cut the lasagna into squares or rectangles, depending on your preference.
