Oven Fried Feta Rolls this …

Ingredients:

  • 8 ounces feta cheese, crumbled
  • 1 cup ricotta cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 1 package of phyllo dough (about 16 ounces), thawed
  • 1/2 cup unsalted butter, melted
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Preparing the Filling

  1. In a large mixing bowl, combine the crumbled feta cheese and ricotta cheese. Use a fork to mix them together until well combined.
  2. Add the dried oregano, garlic powder, lemon juice, and olive oil to the cheese mixture. Stir until all ingredients are evenly incorporated.
  3. Season the mixture with salt and pepper to taste. Remember that feta can be quite salty, so adjust accordingly.
  4. Set the filling aside while you prepare the phyllo dough.

Preparing the Phyllo Dough

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking.
  2. Unroll the phyllo dough and cover it with a damp kitchen towel to prevent it from drying out.
  3. Take one sheet of phyllo dough and place it on a clean, flat surface. Brush the sheet lightly with melted butter using a pastry brush.
  4. Layer another sheet of phyllo dough on top of the first one and brush it with more melted butter. Repeat this process until you have 4 layers of phyllo dough, each brushed with butter.

Assembling the Feta Rolls

  1. Once you have your layered phyllo dough, cut the stack into rectangles about 4 inches wide.
  2. Place a generous tablespoon of the cheese filling at one end of each rectangle.
  3. Fold the sides of the phyllo dough over the filling, then roll it up tightly from the filled end to the opposite end, creating a neat roll.
  4. Place the rolled feta rolls seam-side down on the prepared baking sheet. Repeat the process with the remaining phyllo dough and filling.

Baking the Feta Rolls

  1. Once all the rolls are assembled, brush the tops with any remaining melted butter. This will help them achieve a beautiful golden color while baking.
  2. Sprinkle the grated Parmesan cheese evenly over the tops of the rolls for added flavor and a crispy texture.
  3. Bake in the preheated oven for 25-30 minutes, or until the rolls are golden brown and crispy.
  4. Keep an eye on them towards the end of the baking time to ensure they don’t burn.

Serving the Feta Rolls

  1. Once baked, remove the feta rolls from the oven and let them cool for a few minutes on the baking sheet.
  2. Transfer the rolls to a serving platter. You can garnish them with freshly chopped parsley for a pop of color and added freshness.
  3. These oven-fried feta rolls are best served warm. They make a delightful appetizer or snack, perfect for gatherings or a cozy night in.
  4. Consider serving them with a side of marinara sauce or a yogurt dip for an extra layer of flavor.

Tips for Success

  • Make sure to keep the phyllo dough covered with a damp towel while you work to prevent it from drying out.
  • If you have leftover filling, it can be stored in the refrigerator for up to 3 days. You can use it in other dishes like pasta or as a spread.
  • Feel free to experiment with different herbs and spices in the filling to suit your taste preferences.
  • For a healthier version, you can use whole wheat phyllo dough and reduce the amount of butter used.

Ingredients

  • 8 ounces feta cheese, crumbled
  • 1 cup ricotta cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 1 package of phyllo dough (about 16 ounces), thawed
  • 1/2 cup unsalted butter, melted
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions
